Now, I do want to put a disclaimer that Rimworld really is a survival game and it’s meant to be difficult, so which mods you chose to add depend wholly on how difficult or easy you want to make it on yourself. This game is very much enjoyable for people who don't like Ludeon's twisted vision of what constitutes a settlement builder there's just some assembly required to figure out your perfect fit and get it there. Don't be afraid to use the dev menu (enabled via settings) to track errors and work around bugs where necessary. Spend a few hours browsing through the available mods to find a loadout to your liking, set it up, then spend a few starts working out what's going to cause errors/break and trim it down until you have a functional loadout.
You sound like you've hit the same wall I did with vanilla, so I'm suggesting the same solution: Mod your game. You can literally rebuild the entire play experience to whatever you want it to be through combinations of various mods, adjusting QoL, events, and content to your liking.

Perhaps what you don't get about Rimworld boils down to either ignoring the risks that the game does in fact inform you about or you underestimate them. You can examine the aggressiveness of any creature before you decide to hunt them and then determine if you are ready for the eventuality of an angry giant sloth ) There are certain creatures that are more likely to react badly to such attempts and you ought to either be prepared for that or avoid them until you can handle such an event.
